Actually we do have some canon. According to Lupin in PoA, when a
dementor sucks your soul, you become a vegetable. You loose your mind
including, specifically, memories:
"You can exist without your soul...as long as your brain and heart
are still working. But you'll have no sense of self anymore, no
memory no...anything. There's no chance at all of recovery. You'll
just -- exist. As an empty shell. And your soul is gone
forever...lost." (p. 247)
This canon supports a wizard view of the soul as including the mind
and, specifically, memories.
